Meringue Powder Royal Icing:

Ingredients:
¼ cup meringue powder
½ cup cold water
1 lb 10X confectioners sugar, sifted (type available in grocery store)
½ tsp lemon extract

Add meringue powder to cold water in a mixing bowl.
Beat to a soft peak stage about 3 minutes on medium-high speed.
Add the confectioners sugar 1 cup at a time.
Beat between each cup.
Add the lemon juice.
Beat for an additional 3 to 5 minutes on medium-high speed or until the icing forms medium to stiff peaks.
Cover with plastic wrap until ready to use.
